FoodFoodFood - Eggplant Tomato Mozzerella



Ingredients

1 medium eggplant, chopped

1 small onion, chopped

1 Tbsp. oregano

8 oz. fresh mushrooms

1 ½ cups fresh tomatoes, chopped

24 oz. Tomato Basil Marinara sauce

¼ cup fresh basil, chopped

2 c. part skim Mozzarella

½ c. fresh Parmesan, grated

Directions

Spray 9x13 inch casserole dish with cooking spray. Layer the ingredients in a 9x13 inch casserole dish in the order given. Cover and bake at 400° for 45 minutes.



Option: Serve over any kind of pasta.
